Edible fungi occurs in two main types; white truffles and black truffles.
Within these two main categories are several sub categories, such as
summer and winter. Both the white and the black are highly sought after
delicacies. Though having gained popularity of late in the USA, they
have been valued as a rare food for several years in Europe. Of the two
varieties the white truffle is more expensive and exclusive. White truffles
from the region of Italy known as Alba, are sold at a high price tag
throughout the European continent are generally the most sought after
truffles. Incidentally, white truffles are also produced in the USA,
mainly from Oregon, but are a less expensive find.
White truffles have a pungent aroma and a VERY powerful taste. A
small amount of white truffle goes a long way in the kitchen. This
truffle variety is as times referred to as the ‘Diamond’ of the
culinary world. This is true as the truffle is a seasonal product and
it fruits only during the two autumn months. The availability of this
truffle is rare making it one of the most hunted products. Farmers all
across the European continent search for the biggest size of these
tubers. Occurring below the ground level it is not easy to hunt these
tubers. Farmers use dogs and hogs that are especially skilled to dig
for these fungi. Dogs are naturally skilled to sniff well and female
pigs make excellent hunters of truffles.
These fungi can be consumed raw and make a very good additive in raw
salads. These truffles are also used to make some excellent culinary
products which are a real craze in the markets. Some of the relished
products prepared from these are truffle oil, butter, juice and paste.
